La Bouitte – Hôtel Relais & Châteaux – Saint Marcel

La Bouitte Hotel, its Mountain Nature Spa and Gourmet Restaurant is nestled in the hamlet of Saint-Marcel, in the village of Saint-Martin-de-Belleville, in the heart of Les 3 Vallées ski area.

This is a unique site, both in terms of its size (a valley extending over 230km² which makes up half the area of Les 3 Vallées) and its beauty, as well as the diversity of its landscapes and outdoor sporting activities.

A traditional chalet in the heart of the Belleville valley, antique wood and local stone steeped in history, soft fabrics and a sincere sense of hospitality that can be felt in the tender gaze of René and Marie-Louise and in the sincere smiles of Maxime and Delphine Meilleur.

Coming to La Bouitte is like attending a family get-together, like coming home, as if designed to conjure up happy childhood days.

Behind its doors, the 5-star La Bouitte Hotel and Gourmet Restaurant in Savoie cultivates a quiet sense of tranquillity, removed from the constraints of the world at large, but very much in the here and now.

A mountain refuge where authenticity has become a way of life. A family establishment with a vibrant soul: a place to reconnect.

Treat yourself to a stay at La Bouitte and wake up to a white paradise. Eight cocoon-like rooms and seven suites with a mountain feel ingrained in their very timbers. With windows wide open to the peaks, luxurious fabrics, antique furnishings and family pictures, they exude all the warmth and cosiness of an alpine refuge.

We booked a big family Christmas skiing in France through Gilles at Top Snow Travel and absolutely loved it!! We will definitely be back; our accom was perfect and Gilles helped with trains, transfers, lift tickets and lessons - even restaurant recommendations. Last year we booked a ski holiday to the 3 Valleys in France through Top Snow Travel and have just returned from a week in Meribel. Gilles was extremely helpful with advice and suggestions to help us make our decisions in regard to where to stay and which valley (we had a non-skier so it was important they were also catered too). It was overwhelming when we tried to work out how to book this part of our holiday on our own so it was good to have his advice and help, including with transport to and from Meribel. We would use Gilles and Top Snow Travel again, thanks for a great trip.

Just returning home from a week long ski trip to Les 3 Vallèes. Topsnow made all the arrangements and everything was amazing. We arrived with a big snowstorm so the Off Piste guides that were arranged were fantastic. And to top it off we had four days of bluebird skies after that!

Thank you to Gilles for organising our ski trip in France. The choice of resort ticked all our boxes - an amazing village, resort, hotel (the pool with the view of the slopes!) and food. All was seamless, from transfers to/from the train station to the hotel, ski hire, lift tickets, lessons. We had a fantastic time and would go back to the exact same place again (next time without the teenagers!). Highly recommend Top Snow Travel - Gilles' recommendations and organisation made for an unforgettable experience.

Natural remedies

Breathe in the fresh air, allow the altitude to stimulate your red blood cell production, be at one with the elements as you contemplate the immensity of the eternal rocks that form the highest peaks of the Tarentaise valley: the mountains are a healing power.

And from their alpine pastures, forests and peaks, find medicinal herbs, soothing plants and flowers that bestow a multitude of benefits.
The pure air is a rejuvenating cure, the fragrances an awakening of the senses, and the mere sight of the horizon, criss-crossed by its tapering peaks, a soothing balm.

In osmosis and symbiosis, the lofty peaks have long been a source of healing. And at La Bèla Vya Spa at La Bouitte Hotel in the Alps, the benefits of the mountains are used to energise, tone and balance body and mind.

A return to nature through a selection of exclusive treatments: the very source of wellbeing.

The solan, a bed of hay

Exclusive to La Bèla Vya Spa at the Relais & Châteaux La Bouitte Hotel in Saint-Martin-de-Belleville is the solan steam bath, set on its bed of valley hay.
The space resembles a cot bed, like those from the Savoie of yesteryear. Picture a mattress of freshly cut hay covered by a thick cotton sheet. The curtain closes, the light dims, and it is time to enjoy a steam bath whose vapours release the aromatic and relaxing properties of the hay – a real tribute to pastoral traditions.

The scent of hay, a fragrance reminiscent of childhood, adds a hint of nostalgia to the experience that works to gently soothe the senses.

Two self-taught chefs and individuals at the top of their game.

Hailing from a rural family and son of a cabinetmaker and farmer, René never studied cooking but rather has an instinctive connection to the land and nature of Savoie.

A contemplative poet at heart, he sees beauty in simplicity and has the sensitivity and compassion of a true proponent of generosity.
As a former biathlete in the French junior team and with conviction shining in his azure-blue eyes, Maxime is a man who has forged his reputation by pushing himself to the limit. Cooking is his form of expression, a language from the heart to be shared.

Excellence is a driving force that constantly pushes this duo to aim higher. Tireless workers and descendants of hard-working mountain settlers, this father and son team have fashioned their own culinary world, in the same way they built their house, stone by stone, with their own hands.

The cuisine at La Bouitte Gourmet Restaurant in Savoie is a whole that is so much more than the sum of its parts.

One senses the precision of a biathlete and the tenderness of a poet, and their desire to honour, with a contemporary twist, the history, culture and traditions of Savoie.

Entwined together at the height of their culinary art, happiness is only ever a reality when shared. Together, everything is “Meilleur”.

A playful and ever-evolving cuisine

The cuisine of René and Maxime Meilleur captures Savoie with sensitivity. Neither bound by any preconceived notions, nor students of any mentor, René and Maxime Meilleur are free from all constraints.

Free to create in their own inimitable style, to the point of inventing their very own culinary language.
At La Bouitte Gourmet Restaurant in Saint-Martin-de-Belleville, the signature is utterly individual, and the chefs behind it, free from inhibition.

And it is as much the terrain as the richness of the Savoie landscapes that naturally punctuate their style.

A style as clear as the water in the torrents when the melting snows swell the rivers, as authentic as the mountains that stretch forever skywards, and as delicate as the wild flowers in the hillside pastures.
Instinct, common sense and an intimate knowledge of the land in which they were born are the driving forces behind a cuisine that is as precise as it is pure, and with no unnecessary frills.

Silken, sensual and subtle, the Meilleur signature brings to life the mountains, lakes and alpine pastures of Savoie. Like a tightrope walker, it skips along the ridges, striking the perfect balance of Savoyard poetry straight from the heart. Playful, generous and multi-dimensional, this is a cuisine that reveals itself in successive layers, while captivating with its apparent simplicity and clarity.

The Shepherd’s Breakfast

The Shepherd’s Breakfast is the first of many gastronomic highlights at the luxury hotel and Michelin-starred restaurant, La Bouitte in Saint-Martin-de-Belleville.

It showcases the Savoie region in buffet-style, with pork and wild boar sausages, Serge Jay’s incredible sheep’s milk Sérac cheese from the village of Le Chatelard, Belleville pâté, Maurienne ham sliced by hand, smoked trout from Alpine rivers, and Beaufort, Tomme and Reblochon cheeses from the valley’s local farmers.

And the very first ceremony to which we religiously adhere is the unveiling of the incredible sourdough bread produced by La Bouitte’s very own baker.

Whether traditional, rustic or rye, made with potatoes, corn or walnuts, it catapults the flavours of yesteryear to the fore – a nostalgia-filled moment.

With its exceptional buttery pastries, marbled cakes, flaky brioches, seasonal fruit, and eggs cooked in a myriad of ways, breakfast is the perfect way to get your day off to a flying start.

Savour the flavours of Savoie.

These Booking Conditions set out the terms on which you contract with us for the arrangement and coordination of delivery of travel arrangements for your trip. By making a booking with us, you acknowledge that you have read, understood and agree to be bound by these Booking Conditions. We reserve the right to change these Booking Conditions at any time prior to you making a booking request.

Deposit

A 50% deposit per person, is payable upon us accepting your booking. Please note that we may not hold any services for you until we receive payment of your deposit, meaning that services may become unavailable or prices may increase, in which case you will be responsible for paying the increased price, and we will not be responsible if services become unavailable. Some arrangements may require full payment at the time of booking. We will advise you of this if this is the case.

Final Payment

Payment in full must be received no less than 90 days before commencement of your trip. Note: some trips or particular arrangements may require payment earlier or in additional instalments and this will be advised with the booking confirmation.

If you fail to make payment by the due date, we will remind you to make payment. In addition to the payment, you will also be responsible for any costs imposed on us by suppliers resulting from late payment. If we do not receive payment within 7 days after the reminder, you will be deemed to have cancelled your booking.

 Cancellation Policy

You may cancel your booking by giving written notice to us. Cancellation fees and charges will be levied as follows:

  • any amounts we have paid or have contractually committed to pay to third parties to deliver your travel arrangements which we cannot reasonably recover or not incur (for example payments made or due to third parties for accommodation, transfers, lift passes, ski rental, ski lessons, hire vehicles, and any other elements comprising your travel arrangements);
  • a fee equal to the deposit or 25% of the booking value (whichever is the greater) to compensate us for work performed and associated overheads up until the time of cancellation (including work performed in connection with your travel arrangements prior to your booking) and our loss of expected profit; and
  • a fee equal to AUD $330 or 5% of the booking value (whichever is the greater) to compensate us for processing the cancellation and any associated refund.

Cancellation fees and charges will not exceed payments received by us at the time of cancellation. If after the application of these fees and charges there is a surplus of payments you have made to us, we will refund this to you within a reasonable time.

Any payments we have made to third parties will only be refunded to you once we have deducted the above cancellation fees and charges and once we have actually recovered the amounts from the third parties. As we will be subject to third party terms and conditions, we make no guarantee that we will be able to make recoveries.

For group departures, a transfer of a confirmed booking to another departure date is deemed to be cancellation of the original booking.
